Yes, baking is a science and scaling isn't exact due to the factors of decimal places and rounding that can occur, add to that changes in oven temperatures and baking time, and many factors can cause you issues.​

Troubleshooting with scaling:
  • If you do wish to alter a recipe for an event, then make sure that you do a test cake first, ensuring that all your ingredients quantities and timings are bulletproof.
  • Some recipes can be altered with no issues, but some may require a little more trial and error.
  • If you're trying to make a petite version of an original recipe, it may be worth looking for a smaller, more exact recipe.
  • There are certain recipes that you can double up on easily.
  • If you have issues making a large batch, you can make smaller batches of the recipe or make a few smaller bakes, thus giving you the required portions.
