When making Victoria sponges do you put the tins on a baking tray or the oven bars? If using a tray is it hot or cold? Thanks Liz

Hi Liz

Whenever I make mine, I always split the mixture between two sandwich tins and then put the tins straight onto the oven bars and on the middle shelf of the oven.

I only ever advise using a pre-heated baking tray if people are having issues with their oven and their cakes are sinking as it adds heat directly to the bottom of the tin.

I wouldn't advise putting your tins on a baking tray as your sandwich tins would touch and when making Victoria sponges, if the tins touch, the cakes tend to bake towards each other, and you can end up with a wonky peak. So ensure they are about an inch apart if you can.

Here's my tutorial.

Good luck. 👩‍🍳

Cold tray - Would stop any excess spilling over if you'd overfilled them. (Best to use on a single tin).

Hot Tray - Would add direct heat to the bottom of your tin if you needed it.

But you don't need either, so bake away. 😊
