I taught my students how to make different variations of this shirt cake at my Class at Salford College. This is a small 6-inch Madeira cake, filled with strawberry jam, covered with white icing fondant. The collar was made with an additional strip of icing/fondant, a PME wheeler was used to create the stitching effect, and tylo powder was added as a hardening agent. The tie was made in two parts with black icing/fondant. The large flap of the tie was cut freehand, and then the knot of the tie was moulded around the collar using a blob of black icing and my fingers to mould into shape.
