To make Toffee Apples and Lollipops, all you need to do is make a batch of treacle toffee. Once baked, push lollipop sticks into the core section of your apples and rotate around the pan until covered. Place on a greased baking tray to cool and then wrap in clingfilm when finished. To make the small lollipops pour the treacle toffee into the circles in a greased bun tin, place the sticks in the middle of the toffee whilst cooling. Once set rotate in a circle to remove and then wrap in clingfilm. WARNING this mix is very HOT, rinse any splashes off the skin immediately as toffee can weld to your skin and may cause scarring. These crazy Cookie Monster cupcakes are a fun treat to make with the kids and are pretty easy to make. All you need is a batch of cupcakes and buttercream, blue food dye (preferably concentrated dye), white chocolate buttons, rolled black fondant, mini cookies and a Wilton #233 nozzle. Who could resist one of these mini 99 cupcakes covered in vanilla flavoured buttercream, a dash of sprinkles and finished off with a cut-up flake? Delicious! These fun designs are a hit with the kids, and a great for a summer treat. They will also be a big hit at the barbecue! Summer inspired cupcakes designs; you can't beat it. These are a similar design to the 99 theme but are swirled themed cupcakes covered in swirly whirly frosting. The swirl is created by adding Claret coloured concentrated dye to the frosting and also to the cupcake batter using a cocktail stick! You've heard of a Neapolitan Cake so why not have Neapolitan cupcakes! I have slightly differed from the norm on these, and rather than stacking the chocolate, vanilla and strawberry directly layering on top of one another, I thought I would opt for all three together in the cake albeit next to each other, that way no matter which side you bite you always get a different variety and taste! To recreate this design, make a batch of batter, split the mix evenly and then dye and flavour the strawberry and chocolate layers and then place them all into one cupcake case. Make any flavoured batch of cupcakes you like then pipe some buttercream or squirt fresh cream on top of the cupcake, drizzle with melted chocolate, add some white and dark chocolate sprinkles and top with a cherry!
