How to make embossed icing using a patterned rolling pin. (2 Viewers)

Here is a step by step guide on how to create embossed patterned icing for your cupcakes.

1. Lightly dust your work surface or a silicone mat with icing sugar or cornflour.

2. Take a piece of icing or fondant and place it on your lightly dusted surface.

3. Roll out your icing fondant using a normal rolling pin.

4. Roll the icing out to the thickness of a £1 coin or roughly to 3mm to 4mm thick.

5. Now take your lightly dusted (with icing sugar or cornflour) embossed roller, press down slightly and roll it over your icing fondant ensuring you apply enough pressure that the pattern is pressed into the icing.

6. Now take a circle cutter and cut out your circle of icing and remove any excess.

7. Your embossed icing can now be stuck to your cupcake using any form of jam, curd or buttercream.

How to make freehand oval-shaped embossed icing.

In the event you would like your embossed icing to be oval in shape for Easter egg-shaped biscuits etc. then simply complete stage 1 - 4 above and then do the following:-

Once you have rolled out your icing using just a normal rolling pin, take a circle cutter and cut out a plain circle.

Now take your embossed roller, press lightly but firmly and press the lightly dusted roller into your icing and push upwards.

This will cause your icing to stretch out and form an oval shape.

These can then be stuck to biscuits using either jam, edible glue or royal icing.
