My friend and I both use same recipe for Vic. Sandwich. 8oz Marge,castor sugar, SR flour and 4 eggs, in 8" tins. Hers is light and fluffy, mine is more cake than sponge.

The 'light and fluffy' comes from aeration when you mix the butter and sugar together using the creaming method. The more you mix the butter and sugar with an electric whisk the lighter the mixture will go in colour and the more air will be incorporated into the batter. This is what gives the cake a light and fluffy texture.


You may not be mixing it for the same amount of time, are you mixing it manually with a wooden spoon or do you use the all in one method?


Either way, your cakes won't always turn out the same because you'll both make things differently. I.e. The amount of time you whisk, the pressure you use, ovens, etc.
