Hidden surprises within a cake, great for baby showers!
- This tutorial will show you have to place a coloured piece of cake within a cupcake which will be an added surprise to your guests. (Even though you are effectively baking the middle piece of the cake twice it does not go dry as the moisture and wetness from the new batter prevents it from drying out and seals in the freshness).
Preheat your oven to:
170°C Electric Fan Assisted
190° Electric Regular Oven
Gas Mark 3

1. Make a batch of Victoria Sandwich mix in a large mixing bowl.
You will need:
150 grams Margarine
150 grams Sugar
3 Medium Eggs
150 grams self-raising flour.
Cream the butter and sugar in the mixing bowl using a whisk and then add the eggs 1 at a time to the mix, finally, add the flour and whisk until all the mix is combined. For the full tutorial on how to do this, please see Victoria Sandwich Tutorial and do stages 1 - 6, then continue here.
2. Split the mix into two bowls.
3. Now use your concentrated dyes to dye your batter using cocktail sticks, I used Claret and Baby Blue Sugarflair dyes.
4. Place a small amount of dye on the edge of a cocktail stick and then swirl into your mixture.
5. Now use a spatula and stir the mixture and to combine the batter and dye together.
6. If the colour is not deep enough, add a little more dye using the cocktail stick and then continue to stir in.
7. Once you have added enough colour place to one side.
8. Now repeat the process doing the same with the pink dye until combined.
9. Both mixtures should now be coloured.
10. These should now be poured into a pre-greased sandwich tin.
11. Place on the middle shelf of a preheated the oven and bake for approx 25 mins.
12. Once baked remove from the oven and place the tins on a wire rack for 5 minutes to cool.
13. Now take a pallet knife and score around the edge of the tin to ensure the cake is free from the tin. Then turn the tin over but have the pallet knife underneath to help prevent the cake from just dropping out. Lift the sandwich tin up, and the cake should just come away.
14. Leave to fully cool.
15. Now make another batch of Victoria Cupcake Mix
Preheat your oven to:
180°C Fan assisted.
200°C Regular Oven
Gas Mark 4

You will need:

16. Now cut the pre-made pink and blue cake into circles using a small circle cutter. You may cut into whatever shapes you wish.
17. The cut shape needs to be as thick as the above pink piece and heavy enough to remain in place whilst cooking. Try the shapes in the cupcake case before placing in the mix to see if they fit and then TAKE them OUT again.
(* Note: You will see that the blue cake circle is thinner than the pink one, this is too thin and actually tilted and floated to the top whilst baking because it wasn't heavy enough to stay in place).
18. Now scoop some cake batter into the cases and then place the pink and blue circles into the middle of the batter in an upright position as a wheel would be.
19. Now scoop the remaining cake batter on top of the inserted cake and fill the case until the piece of cake in the middle is fully covered and cannot be seen.
20. Now place in the preheated oven and bake for approximately 16-18 minutes. These will bake quicker as the middle is effectively already cooked so insert the skewer to the edges of the cake to ensure fully baked.
21. Once baked, take out of the oven and remove the cakes from the muffin tin. Allow to cool on a wire rack. This is how they will look once finished.
This is how the blues ones turned out, the blue cake tipped over and floated to the top whilst baking because it wasn't heavy enough to stay in place. Some people actually like this design.
22. Here is another batch of cupcakes that I made where the hidden cake piece stayed in place; this is because the pieces were thick enough to stay put. You will see that some are square and some are circular. These are all actually circled pieces of cake but depending on which way you cut the cake will depend upon the shape inside.
