If you want to ensure that your cupcakes come out moist and fluffy each time, then why not try some of the following techniques to help you out.
A little tweak here and there with your baking can lead to fabulous results.
It's all about creating air bubbles; therefore, if you're using a stand mixer, mix your batter on a very slow speed until the ingredients have just combined.
Try not to over mix; otherwise, you'll undo all that lovely work you've just put into it. Overbeating leads to tough and dense cakes, and we want to avoid that! If you over-mix your batter, you will pop all the lovely air you've just created, so to prevent that, you could use a hand whisk instead. That way, you can see precisely when the ingredients are combining together.
To ensure your cupcakes are moist, use recipes that add oil or yoghurt to them. Oil will ensure they are moist and last longer, and ones that contain yoghurt will ensure the cupcake is both tender and moist.
Mayonnaise can also be added to your cupcakes to make them extra moist too. Plain mayonnaise contains both eggs and oil, so it's okay to put in your mixture. In addition, the vinegar it contains is a preservative, so they may last longer too.
Coring your cupcake and then adding a filling to it can also help give the centre of it extra moisture and additional flavour and texture.
Freezing cupcakes is also another way you can help lock in moisture until they're actually needed.
Switching brown sugar for white sugar can help moisten your cupcakes, as brown sugar contains molasses. However, please note that if you do swap out your sugar, then the molasses in the brown sugar will slightly alter the taste and colour of your bakes, giving it a more caramel colour and flavoured undertone, so this is best to do on chocolate or darker themed cupcakes.
Stock syrups and drizzling with golden syrup are also another quick way of adding moisture to your cupcakes too.
