Hello , I’m doing some baking for a friend who runs an retail outlet. Can anyone please help with a recipe for a fruit cake using a liner in a 2lb loaf tin. Please can I ask for tried and tested recipes only, I want the cake to be “light & soft” if you know what I mean. Thanks

Thank you Angie for that recipe but it still looks too dark, possibly the all bran in it. I want something almost as light in colour as a cherry cake

Ahh, okay, maybe you could make a Madeira cake which is light in colour and then add mixed fruit to it. Either that or you need something like a farmhouse cake, but that may also be too dark.

I've just had a quick scout on the internet and came across this. It may be the colour you're looking for.
