I have some homemade frozen rough puff pastry, I want to make sausage rolls ahead of time, can I make and refreeze them uncooked then cook them on the day, also could they be reheated the following day. I am worried about making people ill.
Thank you

Hi @grannybaker

Re Freeze Pastry - You can, but I wouldn't recommend it as it can affect the overall bake with regard to the colour, taste and texture/crispiness of the pastry. However, if you had ready-made pastry from the fridge (not previously frozen), prepped the sausage rolls and then froze them to bake on the day, then probably yes. But to thaw, prep and refreeze the same dough for the sausage rolls, isn't a good idea as I don't think you'll get the best sausage rolls taste and texture-wise for your guests.

Baked Sausage Rolls - They can be kept cold in the fridge after baking, but again to reheat them the following day it would be worth pulling out some more frozen ones and just making a fresh batch again to ensure good taste and texture. Sausage rolls are freshest on the day they are baked.
