Fast and Easy Raisin Cookies (1 Viewer)

A recipe from my late mother, a bit modified. Made these last time on Saturday, tastes good! I have no picture of them, trying to remember next time I'll make them and add it then here.

Please understand I am not good with measuring stuff, I just put everything in a bowl as I feel, not measuring, so these are only approximate values:


Ingredients:


  • 250 grams butter
  • 2 cups sugar
  • 1 big egg
  • 3 ½ cup flour (wheat)
  • ½ teaspoon of baking soda
  • ½ tsp baking powder
  • 2 cups raisins
(My "cup" is about the size of a normal (small) coffee cup.)

Mix butter and sugar really well, almost like foam, add the egg. Mix baking powder and soda with flour, add and mix well. Add raisins.

The dough should be quite loose, take some with a table spoon and spread on baking tray.

Bake at 175°C (345°F) about 10 to 15 minutes.
