Baking large cakes (1 Viewer)

Help I am making my daughters wedding cake in October. I have been practicing with an 8 x 3 Wilton cake tin not used to using large tins. I baked for 45 minutes at 150c fan with a cake band and one heating rod. The outside was cooked but the inside wasn’t gooey but definitely not cooked when I tested it the knife was clean. Should I bake it longer or at a lower temperature? I haven’t even tried the 10 x 3 tin yet!

Congrats on the upcoming wedding and the fact that you are making the cake.

Yeah, for an 8 x 3 inch (not sure if you're making square or round), you definitely need to bake it for longer.

150°C is a good temp to use. Check your oven manual for which shelf would be best too. You don't always have to bake on the centre shelf. What kind of cake are you making? I bake an 8 x 3 inch Madeira at 150°C for 1hr 50mins, but for a 7 x 3 inch Victoria cake, I do 55-60 mins so it all depends on the type of cake you're making.

Just for comparison.

It's good that you're trying and testing the cakes beforehand and that you have given yourself enough time to master the timings. The larger the cake, the lower the temp, but you don't want to go too low which is why 150°C should be a good one to work with.

Thanks I am making a sponge cake using the same ingredients as your 7 x 3 sponge as making 2 for one tier I will try baking for longer.
