I was asked today by my good friend Mike...

"Why is white chocolate called chocolate even though it technically isn't?"

Well, dark chocolate and milk chocolate contain cocoa liquor yet white chocolate does not therefore Chocolatiers would argue that white chocolate is not in fact chocolate. White chocolate actually consists of cocoa butter, sugars, milk and additional flavouring.

In order to sell 'White chocolate' regulations have been brought into place by the USA and EU and in order for it to be classified as such it must contain certain percentages (in weight) of cocoa butter, total milk solids, milk fat and sugar or sweeteners.

However, if I asked the general population to mention three different types of chocolate they would probably reply, dark, milk and white. I think because it is marketed as such most people believe that it is chocolate.
