Pie crust (1 Viewer)

There are two things I could suggest, bake the pie on the top shelf for about ten minutes then place on the middle shelf of the oven and cook for the remainder of the time. Thus trying to cook the pastry quicker.

Or pre heat a flat tray in the oven (whilst you're pre heating the oven) and then place your cold pie tray directly on top of the pre heated tray. This will add direct heat to the base of you pie as soon as it hits the oven. It may help the crust to heat quicker and cook better.

I would have said you could add cornflour to the pastry base before adding your contents but I'm sure you've added the contents of the pie by now, it may be softer than you had anticipated, but it may save your pie!
