Hi Azriel

Further to your message on Twitter please find below a list of rough instructions on how to complete your Pastry Pie or what we call a Tart. I do not have your ingredients/recipe so this is just an overview of how to complete the pie.

1. As you stated you know how to prepare the pastry base and bake it blind. Leave this to one side when baked and allow to cool.

2. In order to make the pastry cream (custard) you will need to heat the milk in a pan until it is just boiling, then remove from the heat.

3. In a separate bowl whisk together your egg yolks, flour and sugar until combined, then pour into your pan with the heated milk and cook on a medium heat. Stir constantly until the mixture thickens and comes to the boil.

4. Remove from the heat and transfer to a bowl (a glass one if you have one). You may lightly sprinkle some icing sugar/confectioners sugar on the top to prevent a skin from forming. Leave to cool.

5. Heat your apricot jam with two tablespoons of water (in the microwave or pan) and leave to cool. This makes your apricot glaze. (You can sieve the jam first if you prefer to make it smooth). Put to one side.

6. Scoop your cooled pastry cream (custard) into your pastry base and spread using a spoon, top with whatever fruits you desire, such as strawberries, kiwi, blackberries, raspberries etc then brush lightly with the apricot glaze.

Hopefully now you will able to make your pie.
