Chocolate cupcakes with ganache topping.


Bowl 1
40g Butter at room temp
140g Caster sugar
100g Plain flour
20g Cocoa powder(not drinking chocolate)
1 ½ tsp Baking powder

Mix together until you have a dry sand like consistency.

Place the following in a Jug
120ml whole milk
1 medium egg
¼ teaspoon vanilla extract
Whisk together.

Slowly pour half of the milk mixture into Bowl 1 and mix with an electric whisk on high speed to eradicate any lumps.
Now turn the whisk onto a slow speed and then pour the remaining milk mixture into Bowl 1.
Continue to mix for about a minute.

Divide into 12 muffin cases and bake at 170 degrees / Gas mark 3 for 20 mins in the centre of the oven until firm to the touch.
